The answer is yes. Any part of Cayenne stack can be created via API in
runtime, including DataNodes.
DataNode node = new DataNode("mynode");
for(DataMap map : domain.getDataMaps()) {
node.addDataMap(map);
}
node.setAdapter(...);
node.setDataSource(...);
domain.addNode(node);
